1,250 kg boneless lean lamb cubes

90 ml De Rustica Estate Medium olive oil

2 garlic cloves, crushed

1 large onion, sliced

1 small red chilli, deseeded and chopped finely

175 ml Pinotage

250 ml De Rustica Table Olives, pips removed

Salt to taste

Preheat the oven to 180°C.

Heat the olive oil in an ovenproof saucepan and fry the onion, garlic and chilli for about 5 minutes.

Add the meat and the Pinotage and cook for a further 5 minutes. Stir in the olives. Cover the saucepan and place in the preheated oven and cook for about 90 minutes until the meat is tender.

Season the casserole to taste with salt.

Serve with crusty bread or mash
