“In 2018 harvest, the excellent flowering was strongly affected by the hot winds of those days, already putting a heavy mortgage on the progress of the campaign in the spring. In the summer, the situation has worsened, due to high temperatures and prolonged drought, factors that have caused considerable water stress to the trees. Arriving at the time of harvesting, we did not know what we should have expected. We were well aware of the fact that there would be a moderate drop in the quantity of olives to be crushed, as the fruit set had been significantly compromised. But the smaller quantity, even this is well known, does not necessarily lead to a decline in quality.
The fruits have come to ripen beautiful and healthy, especially thanks to the absence of the fly, whose population, totally annihilated by the very high temperatures, will have to completely reconstitute next year. Finally, olive paste resulted a little bit dry during malaxing, with an oily must not so easy to extract and to clarify in a decanter, but we immediately felt the enormous potential of quality. Certainly, to cooperate with an olive estate which is so concern about quality and so receptive to improvements, greatly facilitates our work. It is an honour to have the opportunity to contribute our bit to improve year after year and to place De Rustica Olive Estate among the best producers in the world. “Its aroma is definite and ample, rich in fragrant green hints of mint and rosemary, with a definite note of artichoke and chicory. Its taste is fine and vegetal, with a flavour of rocket and lettuce and a distinct finish of black pepper and almond. Astringency, bitterness and pungency are present and well balanced.”

 

 

FRANTOIO: “Medium fruity, with herbaceous notes of unripe tomato and green banana. Fresh and clean taste, it opens with a slightly sweet sensation followed by a pleasantly bitter and spicy charge of medium intensity, persistence rich in vegetal notes dominated by tomato.”

 

FAVOLOSA: “Intense fruity, rich in hints of herbaceous notes of artichoke and green almond. Its taste is full and strong and it opens with a sweet sensation followed by both distinct bitterness and pungency; persistence rich in vegetal notes dominated by the herbaceous sensation of artichoke.”

 

KORONEIKI: “Intense fruity, its aroma is ample and round, with vegetal hints of freshly mown grass, enriched by flowery notes. Its taste is fine and complex, with a surprising flavour of rose petals and basil. Bitterness is present and pungency is distinct.”

 

About my PREFERENCES, which of your children is more handsome? Heartbreaking having to choose. I love single cultivar EVOOs. There may be one for each occasion, depending on the food pairing or even the mood of the day (we can try to season the same dish two days in a row, each one with a different variety and we will find two different dishes). It is true that, when you get used to the high quality, you value especially the robust oils, with green notes. But they are not suitable for everything. Personally, I have all four varieties in my kitchen and playing seems super fun to me.
